Crispy Fish Finger
with 
Tasha's now not so secret crumbs mix

Lemon garlic marinated thick fish fingers dipped in egg wash coated with special Tasha’s herbed crumbs mix delicately shallow fried.
The best fingers are crispy on the outside, moist, and juicy from the inside.


A little tip for the achieving the perfectly cooked soft juicy center pick thicker fish fillets, which will give you the ideal crispy-to-juicy ratio. Follow the secrete Tasha’s crumb mix to get the crispiest crust.  It’s a delicious snack or starter option. Ideal complement that goes with these heavenly bites is a tarter dip. One of the most popular non-vegetarian starters.

Ingredients
Boneless basa fish – 250-300 g ( Cut into stripes )

To marinate

Lemon juice – 2 tbs
Crushed garlic – 1 tbs (may add more if desired)
Chopped cilantro – ½ tbs
Salt – to taste
Pepper or red chili powder – to taste (optional)
FOR COATING
Seasoned Flour
Flour 4 tbs
Salt- ½ tsp
Pepper – ½ tsp

Egg Wash

Egg -1
Salt – 2 pinch

Tasha’s Crumbs mix

Brown breadcrumb -6 tbs (regular breadcrumb can do)
Wheat flakes – 3 tbs (alternative is corn flakes or skip completely this is for the added crunch)
Cilantro chopped– 2 tbs

Frying

Oil – 6 tbs for shallow fry (may choose to deep fry or bake)

Procedure

Step 1 Marinate the fish
Add fish fillet/fingers in a bowl sprinkle salt and pepper, add the lemon juice and crushed garlic. Mix well and keep aside for 30 minutes. Ideal time from 1 to 4 hour but not more than 24 (under refrigeration).

Step 2 prepare the seasoned flour
Take a utensil preferably flat mix together flour, salt, pepper.

Step 3 prepare egg wash
Beat an egg and salt together in a bowl and keep it aside

Step 4 Prepare the crumb mix
In a preferably flat plate mix together breadcrumb, wheat flakes, cilantro and keep it aside

Step 5  Dredge the fish 
Dredge the marinated fish in the flour. Shake lightly to dust off excess flour.

Step 6 Egg wash
Dip the dredged fish in egg wash. Hold the fish for 10 sec to let the excess egg drip off.

Step 7 Crumb coat
Drop it into the crumb mixture and roll it so that the crumb sticks to the entire fish piece slight press to all the crumb to stick and also shape the fish and keep it on a plate. Follow this step for all the fish pieces.

Step 8 heat oil
Use a flat pan add any vegetable oil to shallow fry. Make sure all sides face the pan it's done when all sides have got a golden color.
