Delicious apple fudge that is vegan, gluten-free, oil free, kid-friendly dessert.
Which also go by the name Apple coconut barfi or Apple coconut mithai. A burfi is a fudge-like bite-size cubes. They are sweet apple coconut flavored dessert. They are healthy light and the sweet smell of apple takes it to another level. This is an amazing apple dessert to try after one has mastered the apple pie or new to cooking and crave for the apple dessert. Here is one for all who looking for adding some nutrition of the fruits to their sweet bite craving.
Ingredients
1 tsp ghee (Optional)
2 medium sized apple (peeled and shredded)
Few drops of lemon (to stop oxidation of apples)
1 whole freshly grated coconut (one may increase of decrease the quantity of coconut as per desire)
1 cup sugar for a good sweet taste (apple and cocnut are sweet too. Start with ½ and cup if you like mild sweet state)
1/2 cup chopped dry fruits. I have used cashew and pistachios (may add other )
1/4 tsp crushed cardamom (optional)
Procedure
Step 1 Prepare coconut
Great half a coconut or coarsely grind them in the mixer.
Step 2 Prepare the apple
Peal and great the apple using a greater. Squeeze half a lemon on to end to stop oxidation, which leads to change in colour of the apple from white to red.
Step 3 Prepare the mixture
Take a deep-dish preferably nonstick pan. Add butter or ghee immediately add the sugar to the pan keep steering continually on a medium low flame till the sugar dissolves and attain a light golden color. Should take approximately 2 minutes. One may skip the butter or ghee and add 2 tbs water to the sugar instead to make it oil free.
Step 4 Add coconut to the sugar and keep steering continually on a medium low flame for 2 minutes.
Step 5 Include the grated apple to the mixture and continue to steering continually on a medium low flame until water from the apple dries and the mixture binds together. Roughly 5 to 8 minutes
Step 6 Add the cadmium powder. I would personally recommend skipping this as it lessens the apple flavor in the dessert.
Step 7 Add the roughly chopped dry fruits to the mixture mix well and take it off the flame to let it cool. You may add the dry fruits immediately after the apple and then cook for 5 to 8 minutes as in the video.
